Easy Fried Plantain

Growing up, we rarely used to see family since none of us lived very close together. But when we did, my aunt always used to create the most incredible columbian dishes for us to feast upon.

One of my favorite snacks she used to create were fried plantains for us to enjoy while we wait for whatever was coming next. Now, with plantains ready accessible in Hawaii, they’ve become one of my favorite versatile treats.

While I had time to play with my food (despite what my mama said) during quarantine, I was able to mess around and recreate those delicious fried plantains my aunt used to make.

They were so easy to make and a pure delight to consume! I hope you enjoy them as much as I do!

Easy Fried Plantain

Ingredients
  

  • 1 Plantain
  • 1 pinch Sea Salt
  • 1 dash Garlic Powder
  • 1/2 cup Vegetable Oil

Instructions
 

  • Preheat the oil in a sauce pan on medium/high heat.
  • Cut the plantain into about 1 inch sections.
  • Peel the pieces starting with a small slice down the side of each section. It’s not like a banana, it is hard to peel whole.
  • In the hot oil, quickly fry each section until a nice golden yellow color is achieved. About 2 minutes total.
  • Move the lightly fried pieces back to your cutting board, and using a spatula, carefully smash the pieces.
  • Gently move the flattened pieces back to your oil, only about 3 each batch, and fry until a nice light brown crisp is achieved. (about 3 minutes on each side) Watch them carefully as they fry.
  • Remove the freshly fried pieces and place them on a towel lined plate to absorb the excess oil. While fresh from the oil, sprinkle with garlic powder and sea salt.
  • Repeat the last two steps until all of the smashed pieces are fried. Enjoy!
